Hearts of Palm Salad
Makes 4-6 servings
- 3 cans of salad cut Hearts of Palm
- 3 scallions thinly cut
- 1 big handful of curly parsley
- 5 radishes thinly sliced
- 1 container grape tomatoes- halved
Put all ingredients in a bowl and toss.
Dressing
- 1/3 cup olive oil
- 1 whole lemon squeezed
- 2 Tbsp Honey
- 2 Tbsp Dijon mustard
Pour over ingredients and mix well!
